Question 83

Aaliyah wants to make pancakes. The recipe makes use of baking powder and buttermilk. Baking powder is a raising agent that reacts with water to produce carbon dioxide (Figure 8.24). This helps the batter expand and rise.

However, Aaliyah realises she only has baking soda and regular milk. She does some research and finds out the differences between baking powder and baking soda (Table 8.2).

| Baking powder | Baking soda |
|---|---|
| Made up of sodium hydrogen carbonate and a powdered acid such as tartaric acid | Made up of sodium hydrogen carbonate |
| Reacts with water to produce carbon dioxide | Reacts with an acid to produce carbon dioxide |

For her first batch of pancakes, Aaliyah replaces baking powder in the recipe with baking soda. She also replaces buttermilk (pH 4.4–4.9) with milk (pH 6.7–6.9). However, the pancakes do not rise much.

For her second batch of pancakes, Aaliyah continues to use baking soda but decides to add vinegar to the milk. Explain how this batch of pancakes will turn out compared with the pancakes in the first batch.
